This lovely collection begs for a dessert that mirrors its warmth and variety. I’m sharing my Rustic Ginger Peach Galette—its tender peaches and spicy ginger echo the soothing scents and flavours of the pack, tying every cup to a bite of homemade comfort.

Rustic Ginger Peach Galette

Ingredients

  • 1 sheet all-butter pie crust (homemade or store-bought), chilled
  • 3 cups fresh peaches, peeled and sliced
  • 2 tablespoons finely chopped crystallized ginger
  • 2 tablespoons honey (plus extra for drizzling)
  • 1 tablespoon all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 egg, beaten (for egg wash)
  • Turbinado sugar, for sprinkling

Instructions

  1. Prepare Filling: In a bowl, gently toss peach slices with flour, honey, chopped ginger, cinnamon, and lemon juice. Let sit 10 minutes until juices release.
  2. Roll Crust: On a lightly floured surface, roll the chilled pie crust into a rough 12-inch circle. Transfer to a parchment-lined baking sheet.
  3. Assemble Galette: Spoon the peach mixture into the center, leaving a 2-inch border. Fold the crust edges over the filling, pleating as needed to create a rustic edge.
  4. Finish & Bake: Brush the crust with beaten egg and sprinkle edges with turbinado sugar. Bake in a preheated 375°F (190°C) oven for 35–40 minutes, until crust is golden and filling is bubbly.
  5. Serve: Allow to cool slightly, then drizzle with a bit more honey. Slice and enjoy alongside your favorite Wellness tea blend for a heartwarming treat.
