Rustic Ginger Peach Galette
Ingredients
- 1 sheet all-butter pie crust (homemade or store-bought), chilled
- 3 cups fresh peaches, peeled and sliced
- 2 tablespoons finely chopped crystallized ginger
- 2 tablespoons honey (plus extra for drizzling)
- 1 tablespoon all-purpose flour
- ½ teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 egg, beaten (for egg wash)
- Turbinado sugar, for sprinkling
Instructions
- Prepare Filling: In a bowl, gently toss peach slices with flour, honey, chopped ginger, cinnamon, and lemon juice. Let sit 10 minutes until juices release.
- Roll Crust: On a lightly floured surface, roll the chilled pie crust into a rough 12-inch circle. Transfer to a parchment-lined baking sheet.
- Assemble Galette: Spoon the peach mixture into the center, leaving a 2-inch border. Fold the crust edges over the filling, pleating as needed to create a rustic edge.
- Finish & Bake: Brush the crust with beaten egg and sprinkle edges with turbinado sugar. Bake in a preheated 375°F (190°C) oven for 35–40 minutes, until crust is golden and filling is bubbly.
